FIELD: food industry.
SUBSTANCE: group of inventions is related to compositions, providing controlled releasing of warming agent, in the area of receptors of consumer's buccal cavity. Food product, which makes the first invention, contains flavouring substance, bearer and oral warming composition, containing warming agent and hydrated food polymer containing pectin in quantity from approximately 0.2% to approximately 0.4% from mentioned food product weight. The polymer makes solid homogeneous mixture with mentioned warming agent. The second invention object is pastil's composition, containing amorphous vitreous polymeric matrix, containing pectin in quantity from approximately 0.2% to approximately 0.4% from mentioned composition weight containing warming agent, dispersed in it. The third invention object is chewing gum composition, containing flavouring agent, chewing base and oral warming composition, containing warming agent and hydrated food polymer. Mentioned food polymer is presented in quantity, enough for warmth feeling inducing in mammal's mouth and digestive tract upper part. Feeling lasts from 2 seconds to 1 hour. The forth object of invention is method of warmth feeling inducing in the area of receptors of mammal's buccal cavity. The method provides for oral introduction of food product, containing warming agent and hydrated food polymer. After that the area of receptors of buccal cavity is stimulated during 2-45 seconds, while inducing warmth feeling in mammal's mouth and digestive tract upper part. The fifth object of invention is method of food product manufacturing, which provides controlled inducing of warming agent, which provides for warming up of bearer with water solution of hydrated food polymer till changing bearer's crystal phase to amorphous or vitreous phase. Warming agent is dispersed in polymer. Solid homogeneous mixture is obtained. Food product is obtained by integration of components in vitreous phase. The sixth object of invention is method of chewing gum production, providing for chewing gum composition manufacturing. Chewing gum has controlled warming property. Oral warming composition is added to mentioned composition and separate pieces of chewing gum are formed.
EFFECT: as a result, warmth feeling extends.
