FIELD: food products.
SUBSTANCE: recipe components are prepared. Carrots, raw onions and leek are cut, sauteed in melted butter and minced. Potatoes and parsley roots are cut, blanched and minced. Sorrel and green vegetables are frozen and crushed. Crab meat is crushed. Crushing is done by way of mincing. Listed components are mixed with sour cream, fish broth, table salt and CO2-extract of bitter black pepper and bay leaf. The resultant mixture is packaged in aluminium tubes, vacuum-sealed and sterilised. Digestibility index of the preserve worked out is equal to 5.3·104.
EFFECT: enhanced preserve digestibility.
