FIELD: food industry.

SUBSTANCE: invention relates to the method for production of wheat flour, and, especially, to one of manna groats from durum wheat. The method stipulates for dampening of grain with water so that moisture content in grains was from 15% to 16.5%. At the same time with dampening, the grain is also subjected to vibration with frequency of 50 - 300 Hz. The method further includes damp grain conditioning; the conditioned grain is then subjected to desortication in order to remove outer weating layers. Then, conditioned and desorticated grain is ground.

EFFECT: method allows for increasing of milling flour output and decreasing of production time simultaneously, and also to obtain high-quality manna groats.
