FIELD: process engineering.

SUBSTANCE: This invention relates to production of compositions from cereals including bran fractions, compositions enriched in bran, and to their application as nutraceutics in food. In compliance with this invention, one or more grades of clean dry cereals are selected to produce two fractions of bran first of which with content of fibers making at least 40% and content of protein making 20-25% while second fraction contains less than 20% of fibers. Note here that said fractions contain such bioactive components as antioxidants, phenolic complex, lignin, flavonoids, vitamins, fibers, proteins, etc, concentrated in one or more shel layers. Preferably, one of selected grades represents two-row waxy bare-grained CDC Fibar barley, CDC Alamo two-row waxy bare-grained, Merlin two-row waxy bare-grained, Waxbar two-row filmy barley, WB Salute two-row waxy bare-grained barley with high content of WB Salute beta-glucan, and CDC McGwire two-row bare-grained barley. Grain is conditioned by water in amount of 1-3 wt % so that moisture penetrates through fibrous layers of external shel with sticking to separate external layer into two fractions to comply with bioactive components contained in laminar shel.

EFFECT: maximum amount of valuable and wholesome substances.
