FIELD: food products.
SUBSTANCE: method includes interaction of ferric iron citrate with water and ammonium source when stirring at temperature of 55-65°C to obtaining of pH 6.8-7.2. Herewith mass ratio of ferric iron citrate, water and ammonium source is 1:(0.3-1.0):(0.18-0.45). The invention provides obtaining of iron-containing food additive; ammonium-ferric iron (III) citrate brown and in bioavailable form.
EFFECT: high product output.
