FIELD: food industry.
SUBSTANCE: invention is related to bakery of food industry and may be used in production of bakery products. The production method of bakery product includes preparation of semi-finished product by mixing and introducing 1-3% of the required recipe components to flour mass of the food supplement. The supplement is obtained by whipping in the emulsifier of sand sugar, CO2-hop extract, water and phospholipids with antioxidant properties. Kephalin and lecithin are used as phospholipids. The supplement components are taken in the following ratio, wt %: sand sugar - 5-8, mentioned phospholipids with antioxidant properties - 2-5, CO2-hop extract - 1-3, water - the rest.
EFFECT: as a result, porous and specific volume of bakery products is increased, storage dates are increased.
