SUBSTANCE: invention relates to food industry and can be used in the field of bakery production. Present method of bread producing proceeds from dough method of bread preparation. To this effect buckwheat flour of hydrothermally treated grain is mixed up with premium wheat flour in the ratio of 5:95, 7:93, 10:90, 15:85, 20:80, 30:70, 50:50 in the kneading machine for 5-7 minutes. Thereafter bakery compressed yeast, salt, water, vegetable oil and guar gum in amount of 4-6% to the flour mixture are added. Derived dough is fermented out, moulded, proved and baked. As a result, period of freshness retention, specific volume of product and bread-crumb elasticity increase, crust gets brighter.

EFFECT: increasing period of freshness retention, specific volume of product and bread-crumb elasticity; getting brighter crust.
