FIELD: food industry.
SUBSTANCE: invention is related to food industry and may be used in technology of preserves industry for preserves production. Recipe components are prepared for the method implementation. White roots and raw onions are cut, blanched and strained. Fresh green peas and herbs are frozen. Rabbit meat is minced, wheat flour is browned in melted butter, listed components are mixed with bone broth, dry white wine, table salt, citric acid, CO2-extracts of hot black pepper and laurel leaves under oxygen-free conditions. Then prepared mixture is packed into aluminium tubes. Then sealed and sterilised.
EFFECT: expansion of technical facilities and dishes used in production of new preserved food, which allow to increase their digestibility.
