FIELD: food production process.
SUBSTANCE: white roots and onions are cut, blanched and strained. Runner beans and greens are frozen. Rabbit meat is minced, wheat flour is browned in melted butter. The above-mentioned ingredients are mixed with bone broth, white dry wine, culinary salt, citric acid and CO2-extracts of bitter black pepper and laurel leaf. The resultant mixture is packaged in aluminium tubes, vacuum-sealed and sterilised.
EFFECT: new canned food features improved digestibility as compared to a similar dish.
