FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry. According to the proposed method pre-processed beet roots and nisin are packed in jars; the jars are filled with hot water of minimal temperature 90°C for 2-3 minutes. After that the water is substituted with solution heated minimum up to 97°C. Then the jars are seamed and sterilised in autoclave at pressure 157 kPa and temperature 116°C.
EFFECT: decrease of sterilisation duration decreases combined with enhanced thermal treatment uniformity.
