FIELD: food industry.
SUBSTANCE: invention refers to canned food industry and can be implemented at production of preserved food "Garnish red beet" with nisin. The procedure for preserving consists in preliminary preparing red beet and in pre-packing it to tins, in pouring over hot water for 3-4 minutes at temperature 95°C then in pouring over hot water at temperature 97-98°C, in rolling-on and in sterilising in autoclave under new mode.
EFFECT: facilitating decreased duration of sterilising and saving heat energy and water.
