FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry and may be used in production of canned side order carrots with nisin. After a preliminary treatment and canning, cut beet roots are poured with 95°C hot water and left for 3-4 minutes. After that it is replaced with 97-98°C filling, sealed and sterilised in autoclave with further cooling in another autoclave or tank as per mode.
EFFECT: invention enables to decrease sterilisation duration time and save thermal energy and water.
