FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry and may be used in preserving of custard squash. Custard squash is packed in jars; the jars are put in microwave oven for 110-130 sec. After that, the jars are filled with filler at least 97°C hot, sealed and sterilised in autoclave according to the new sterilising mode.
EFFECT: invention allows to decrease sterilising duration and saves thermal energy and water.
