FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry and may be used in production of canned side order carrots. Preservation method provides for putting pre-processed carrots in jars; the jars are treated in microwave field during 80-90 s. After that the jars are filled with filler 95°C hot, sealed and sterilised in autoclave.
EFFECT: invention allows to decrease sterilisation productivity and enhance treatment uniformity.
