FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry. Pre-processed carrots are packed in jars; the jars are put in microwave oven with frequency 2400±50 MHz for 150-160 sec. The jars are filled with water heated to minimum 95°C. The jars are repeatedly put in microwave chamber for 120-130 seconds. After that the jars are sealed and sterilised in autoclave at temperature of 120°C during 25 minutes.
EFFECT: invention allows to decrease sterilisation duration and enhance treatment uniformity.
