FIELD: food industry.

SUBSTANCE: invention is related to preserved food industry and may be used in production of preserved pickled scallops. According to the preservation method scallops are put in jars, jars are filled with brine at 97°C and put in microwave oven for 95-100 seconds. After that they are repeatedly processed in microwave, sealed and sterilised in autoclave according to the new mode.

EFFECT: invention allows to decrease sterilisation process duration and enhance treatment uniformity.
