FIELD: food industry.
SUBSTANCE: invention is related to food industry, namely to technology of coffee substitutes production. Method provides for preparation of the recipe components, extraction of basil by liquid nitrogen with corresponding miscella separation, chicory cutting, drying in microwave field at preset process parametres and frying, barley grain, chestnut and soya frying, mixing of chicory, barley grain, chestnut and soya. Obtained mixture is impregnated by separated miscella performed with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: method allows to produce flavoured coffee drink according to nonwaste technology.
