FIELD: food industry.

SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for extraction of tangerine peels by liquid nitrogen with corresponding miscella separation, preparation of chicory and pomegranate peels, its cutting, drying in microwave field till residual humidity about 20% at microwave field power providing warming raw material till temperature 80-90°C inside the bits during at least an hour. Chicory is fried. After that pomegranate peels are dried by convective method till residual humidity about 5%. Chicory and pomegranate peels are mixed. Obtained mixture is impregnated by separated miscella with simultaneous pressure boost. Depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen follow.

EFFECT: obtaining flavoured coffee drink according to nonwaste technology.
