SUBSTANCE: invention is related to milk industry. Composition for production of soft cheese contains, wt %: sour milk whey -10.0-12.0; of cedar nuts cake with dispersity 0.05-0.5 mm - 0.5-2.0; citric acid - 0.005-0.02, table salt - 0.1-0.2; unskimmed cow milk - the rest. Composition can additionally contain taste flavour in quantity 0.4-0.8 wt %.
EFFECT: invention allows to increase soft cheese food and biological value, digestibility and expand range of produced soft cheeses.
