FIELD: food industry.

SUBSTANCE: method of purifying juice produced from vegetable material and containing saccharose, water and nonsugars involves treating the juice with a gas mixture consisting of the atmospheric gases, air and filtrated atmospheric gases and air, transferring part of the soluble substances from juice into the gas mixture prior to the introduction of alkali, increasing the contact area between the juice and the gas mixture by mixing juice and gas mixture or spraying juice or bubbling the juice by the gas mixture or injecting the gas mixture into the juice and increasing the speed of transferring the said part of the soluble substances from the juice to the gas mixture reducing their content in the juice. Juice produced from sugarcane, sugar beet and sugar sorghum is used. Soluble substances in the juice include dissolved gases from the group consisting of carbon dioxide and sulphur dioxide, carbonate ion, bicarbonate ion and carbonic acid. Sulphur dioxide is chosen from the group consisting of gaseous sulphur dioxide, sulphuric acid and sulphurous acid. Nonsugar soluble substances include water-soluble acids chosen from the group consisting of phosphoric acid, hydrochloric acid, sulphuric acid, citric acid, oxalic acid, succinic acid, fumaric acid, lactic acid, glycolic acid, pyrrolidone carboxylic acid, formic acid, acetic acid, butyric acid, maleic acid and lactic acid. Treatment of juice by gas mixture implies introduction of the mixture into the continuous juice flow resulting in a continuous mixed flow. The mixed flow of the mixture, juice and gas is treated by the reduced pressure produced by the juice flow configuration. The sugar production method implies crystallisation of the condensed purified juice according to the proposed purification method.

EFFECT: increasing efficiency of the juice purification and production of sugar from juice.
