FIELD: sugar production. SUBSTANCE: diffusion juice is subjected to progressing alkalization with lime milk in predefecator to pH 10.2-11.4. Part of juice is withdrawn and saturated to pH 7.5-8.5 using saturation gas saturated with water vapor to equilibrium partial pressure, after which saturated juice is returned into corresponding predefecator zone. Juice is then subjected to cold defecation until pH 11.5-12.5 is reached, heated to 85-90 C and subjected to deammonization bubbling steam heated to temperature by 2-6 C below temperature of defecated juice in order to complete deammonization. Ammonia-free juice is further subjected to hot defecation, saturation, and filtration. EFFECT: improved quality of juice due to more complete precipitation of nonsugars and improved filtration and sedimentation properties. 1 tbl
