FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry. Fruits are packed into jars and treated. Warm air at 140-150°C at speed 5-6 m/s is supplied alternatively 15-20 seconds apart to the first and the second tin neck sectional area during 7-8 minutes with following adding of solution at 97-98°C. After that jars are sealed and sterilised in autoclave according to the new preset mode providing for two-staged cooling.
EFFECT: invention allows to decrease thermal processing duration, enhance treatment uniformity, increase finished product quality with simultaneous saving of thermal energy and water.
