FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry. Prepared fruits are packed and treated in microwave field with frequency 2400±50 MHz during 1.0-1.5 minutes. After that jars are filled with syrup at 97-98°C, sealed and sterilised in autoclave under an innovative formula, proposing for two-staged cooling.
EFFECT: invention allows to decrease thermal processing duration, enhance treatment uniformity, increase finished product quality with simultaneous saving of thermal energy and water.
