FIELD: food industry.

SUBSTANCE: production method of frozen concentrated leaven based on symbiosis of probiotical bacteria provides for preparation of nutrient medium based on enlightened curdy whey with addition of cobalt chloride in quantity (0.1-0.2) mg/ml. Combined culture starter in quantity (3-5)% consisting of bifidobacteria and propionate bacteria taken in ratio 1:1 separately activated β-galactosidase is added to cooled ((34±1)°C ) medium. After that cell growing is performed, bacterial mass is separated from cultural medium, mixed with protecting medium, poured and frozen.

EFFECT: this provides increased probiotical properties of starting culture, increased quantity of bifidobacteria and propionate bacteria cells and high activity of milk fermentation.
