FIELD: food industry.
SUBSTANCE: invention relates to food industry. Milk is purified, standardised, homogenated and pasteurised. Milk is maintained and cooled to fermentation temperature. One introduces a combined starter of kefir fungi and Propionibacferium freudenreichii subsp. shermanii propionate bacteria in an amount of 3-5%, taken at a ratio of 1:1, one proceeds with stirring, ripening, cooling and bottling.
EFFECT: invention allows to enhance antibiotic and antimutagenic activity, increase the quantity of B1, B2, B6 vitamins and enrich the product with vitamin B12.
