FIELD: food industry.
SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Peach refuses are extracted by liquid nitrogen with miscella separation. Prepared girasol/sunflower, rosehips, apples and pears are cut, dried separately in microwave field at preset parametres till residual humidity about 20%. Girasol/sunflower and barley grains are fried. Apples and pears are dried by convective method till residual humidity about 5%. Girasol/sunflower, barley grains, rosehips, apples and pears are mixed in mass ratio 5:9:2:2:2 and put into cryomiller shell. The mixture is impregnated by separated miscella with simultaneous pressure boost in the shell. After the impregnation the depressurisation is performed and the mixture is frozen. The mixture is cryomilled in medium of evolved nitrogen.
EFFECT: product obtained from non-traditional raw materials has taste and aroma similar to flavoured coffee.
