FIELD: food industry.
SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Brown laurel is extracted by liquid nitrogen with miscella separation. Prepared sunflower-girasol, rosehips berries, apples and pears are cut, dried separately in microwave field at specified parametres till residual humidity about 20%/ Sunflower-girasol and barley seeds are fried. Apples and pears are dried by conventional method till residual humidity about 5%. Sunflower-girasol, barley seeds, rosehips berries, apples and pears are mixed at weight ratio 5:9:2:2:2 and loaded to the cryo mill drum. The mixture is impregnated with separated miscella with simultaneous pressure increase in the drum. After the impregnation the pressure is released and the mixture is frozen. The mixture is cryomilled in medium of evolved nitrogen.
EFFECT: product made of alternative raw materials when brewed possess the taste and aroma similar to flavoured coffee.
