FIELD: food industry.
SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Brown laurel is extracted by liquid nitrogen with corresponding miscella separation. Prepared yacon, rosehip fruits, apples and pears are cut, dried separately in microwave field at set parametres till residual humidity about 20%. Yacon and barley grain are fried. Rose hips fruits, apples and pears are fried using convective method till residual humidity about 5%. Yacon, barley grain, rose hips, apples and pears are mixed in mass ratio 5:9:2:2:2 and loaded in cryomill basket. Obtained mixture is impregnated by separated miscella with simultaneous pressure boost. After the impregnation the pressure is released and the mixture is frozen. The mixture is cryomilled in medium of evolved nitrogen.
EFFECT: product obtained from unconventional raw material with taste and aroma similar to flavoured coffee at mashing.
