FIELD: food industry.
SUBSTANCE: invention relates to area of manufacturing and processing of food products and can be used in lines for processing coffee products, mostly coffee beans. Method is based on coffee beans preparation and its following thermal processing by frying. Raw materials preparation is performed by its soaking during 5-10 minutes with following fast freezing at -17°C during 15 minutes. Thermal processing (frying) is performed by loading of frozen coffee beans at 218.5°C, maturation of loaded coffee beans during 5 minutes at 185°C, following blowing at residual 175°C-178°C during 7-8 minutes and final maturation without blowing at the same temperature during 40-50 seconds.
EFFECT: this allows to obtain increased quality product.
