FIELD: coffee industry.
SUBSTANCE: method of coffee beans frying is carried out as follows. Coffee grains are heated at heating rate of 20 to 40 °C/min during 6 minutes or less until coffee beans temperature is equal to 160–220 °C. Coffee grains are heated at heating rate from 1 to 10 °C/min to reach maximum temperature of 235 °C. Said heating stages are performed in one fryer chamber. Coffee grains are heated with heating rate of 15 to 40 °C/min for maximum of 3 minutes.
EFFECT: invention provides more varied temperature roasting profiles, which are not currently achievable on an industrial scale, with improved uniformity, and creating possibility of reduction during frying levels of undesirable compounds, such as acrylamide, without affecting aroma, taste and color.
