SUBSTANCE: invention refers to process of manufacture of coffee substitutes. The method consists in preparing recipe components, in extracting almond flowers with liquid nitrogen, in separating corresponding miscella, in cutting and drying of yacon in field of SHF at specified parametres of the process and in roasting of yacon, in roasting acorns, in mixing yacon and acorns, in soaking of produced mixture with separated miscella at simultaneous pressure build-up, in dropping pressure to atmospheric at simultaneous mixture freezing and in cryo-crumbling mixture in medium of precipitated nitrogen.
EFFECT: facilitating production of new aromatised coffee drink out of non-traditional raw material by non-waste process.
