FIELD: food industry.
SUBSTANCE: invention relates to technologies of canned compotes manufacturing. The method provides for preparation of recipe components, their cutting, drying in the microwave field at preset process parametres, roasting and grinding of girasol-sunflower, barley grain roasting, mixing of girasol-sunflower and barley grain in mass ratio 7:3, extraction of the obtained mixture with drinking water and at preset process parametres. The obtained extract is filtered, syrup is made on its basis, strawberry and syrup are packaged, sealed and sterilised.
EFFECT: method enables to produce compote with coffee flavour and aroma tones without actual coffee content, simplify the technology and reduce content of boiled fruit in the target product without reducing the product shelf life.
