FIELD: chemistry.
SUBSTANCE: method involves culturing yeast in aerobic conditions on a sterile culture medium with sugar content of 4-6%. The culture medium used is a product of decantation of distillery stillage and wort. Culturing is carried out with injection of sterile wort until content of sugar in the culture medium of 4-6%. When concentration of yeast cells in the culture liquid reaches 700 million cells per milliliter, a nonionic surfactant - proxanol is added in amount of 0.005-0.1 g/l. Aeration and mixture is controlled through with the respiratory coefficient of the yeast. The respiratory coefficient is kept in the phase lag period in the 3.5-10 [gCO2/gO2] range, in the exponential phase period - in the 1.5-2.5 [gCO2/gO2] range, at the last culturing stage - in the 20-35 [gCO2/gO2] range, while holding the culturing liquid for 2-3 hours. Culturing is carried out until concentration of yeast cells on each culturing stage reaches 1500-2000 million cells per milliliter.
EFFECT: yeast with high concentration of cells and with high fermentative activity.
