FIELD: food industry.
SUBSTANCE: method includes preparation of inoculum and stage of fermentation. For preparation of inoculum, yeast adaptation is carried out to stress agent under aerobic or microaerophilic conditions with illumination by visible light of 40-90 MW/l by means of periodical reinoculation. Fermentation is carried out with application of prepared inoculum and at the level of illumination of 40-90 MW/l. Yield of yeast biomass makes 2.2-4.2 g/l.
EFFECT: method provides for high yield of yeast biomass.
