FIELD: alcoholic industry. SUBSTANCE: method comprises cultivating yeast under aerobic conditions on sterile culture medium containing 4-6% of sugar. Cultivation is carried out to attain concentration of yeast cells of 500-1000 mln/ml in culture liquid in each cultivation stage. Last stage culture liquid is kept under anaerobic conditions for 2-3 hours. Method makes it possible to increase concentration of yeast cells by 8 times.
