FIELD: food industry.

SUBSTANCE: invention is intended to be used in food industry for production of coffee substitutes. The method provides for preparing the ingredients, extracting anisetree by liquid nitrogen with corresponding miscella separation, cutting and drying chicory in the microwave field at preset process parametres and roasting, roasting barley, oat and rye grain, mixing the chicory with the barley, oat and rye grain, impregnating the obtained mixture by separated miscella with a simultaneous pressure boost and releasing the pressure until it equals the atmospheric pressure simultaneously freezing the mixture and cryomilling it in the medium of evolved nitrogen.

EFFECT: flavoured coffee drink produced according to a nonwaste technology.
