SUBSTANCE: method of production of flavoured yacon-apple drink involves extraction of Chinese magnolia with liquid nitrogen with corresponding miscella separation, cutting, drying of yacon and apples in a microwave field at preset process parameters. Then yacon is roasted, apples are dried up by convection, yacon and apples are mixed, obtained mixture is impregnated by separated miscella performed with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: method enables to produce new flavoured coffee drink out of unconventional raw material according to nonwaste technology.
