FIELD: food industry.
SUBSTANCE: invention relates to the process of producing coffee substitutes. The method provides for preparing the formula components, extracting dill seeds using liquid nitrogen with correspondent miscella separation. Chicory roots are cut, dried in a microwave field at given process parametres and roasted. Rosehips, apples and pears undergo drying in a microwave field at given process parametres and convective post-drying. Barley grains are roasted. The chicory roots, barley grains, rosehips, apples and pears are mixed up together. The obtained mixture is impregnated with the separated miscella while simultaneously increasing the pressure, then relieving the pressure to the atmospheric one, simultaneously freezing the mixture and subjecting it to cryogenic grinding in the environment of released nitrogen.
EFFECT: invention ensures producing a flavoured coffee drink using a waste-free technology.
