SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for extraction of thyme by liquid nitrogen with corresponding miscella separation, girasol cutting, drying in microwave field at preset process parametres and frying chicory, cutting, drying of brier, apples and pears in microwave field at given process parametres and drying by convective method, frying barley grain, mixing of chicory, barley grain, brier, apples and pears, impregnation of obtained mixture by separated miscella is performed with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: method allows to produce flavoured coffee drink according to nonwaste technology.
