SUBSTANCE: invention relates to the food industry, in particular to the process of producing coffee substitutes. The method provides for preparing the formula components, extracting lemon zest using liquid nitrogen with correspondent miscella separation, cutting chicory roots, their drying in a microwave field at given process parametres and roasting, cutting rosehips, their drying in a microwave field at given process parametres and their convective post-drying, roasting barley grains, acorns, nut kernels, fruit kernels and soya beans, mixing up the chicory roots with the rosehips, barley grains, acorns, nut kernels, fruit kernels and soya beans in the released medium, impregnating the obtained mixture with the separated miscella while simultaneously increasing the pressure, then relieving the pressure to the atmospheric one, simultaneously freezing the mixture and subjecting it to cryogenic grinding in the environment of released nitrogen.

EFFECT: invention enables to obtain instant powder for making a flavoured coffee drink using a waste-free technology.
