SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for preparing the ingredients, extraction of orange rind by liquid nitrogen with corresponding miscella separation, chicory cutting, drying it in microwave field at preset process parametres and frying, cutting, drying of rosehips in microwave field at preset process parametres and further drying up by convective method, frying of barley grain, acorns, kernels of nuts, fruit pits and soya, mixing of chicory, rosehips, barley grain, acorns, kernels of nuts, fruit pits and soya, impregnation of obtained mixture by separated miscella is performed with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: method allows to improve organoleptic properties of the target product and exclude waste products formation.
