FIELD: food industry.
SUBSTANCE: invention is related to technology of preserved compotes. Method provides for preparation of recipe components, cutting, drying in microwave field at specified parametres of process, roasting and grinding of earth apple, roasting and grinding of chestnuts and soya beans, roasting of barley grain, mixing of earth apple, barley grain, chestnuts and soya beans in mass ratio of 7:7:2:4, extraction of produced mixture with drinking water and at specified parametres of process, filtering of produced extract, preparation of syrup on its basis, packing of peaches and syrup, sealing and sterilisation.
EFFECT: method makes it possible to produce compote with coffee nuances of taste and flavor with absence of coffee in recipe, to simplify technology and to reduce content of overcooked fruit in finished product without reduction of its shelf life.
