SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for preparation of the recipe components, extraction of lemon rind by liquid nitrogen with corresponding miscella separation, girasol cutting, drying it in microwave field at preset process parametres and frying, roasting of barley grain, oat grain, acorns and kernels of nuts, mixing of girasol, barley grain, oat grain, acorns and kernels of nuts, impregnation of the obtained mixture by separated miscella is performed with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: invention enables to obtain flavoured coffee drink instant powder according to nonwaste technology.
