SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for preparation of recipe components, extraction of coriander by liquid nitrogen with corresponding miscella separation, girasol cutting, drying it in microwave field at preset process parametres and frying, roasting of barley grain, oats and rye grain, mixing of girasol, barley grain, oats and rye grain, impregnation of obtained mixture by separated miscella is performed with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: method enables to obtain flavoured coffee drink with increased organoleptic properties according to non-waste technology.
