FIELD: food industry.
SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for preparation of recipe components, girasol cutting, drying it in microwave field at preset process parametres and frying, roasting of barley grain and rye, mixing of mentioned components in mass ratio of 2:2:1 and cryomilling of obtained mixture in liquid nitrogen.
EFFECT: method enables to produce new coffee drink according to nonwaste technology.
