FIELD: food industry.
SUBSTANCE: invention is related to food industry, namely to technology of coffee substitutes production. Method provides for preparation of recipe components, extraction of tangerine rind by liquid nitrogen with corresponding miscella separation, girasol cutting, drying it in microwave field at preset process parametres and frying, cutting rosehips, apples and pears, drying them in microwave field at preset process parametres and drying them up by convective method and barley grain frying. Then girasol is mixed with barley grain, rosehips, apples and pears, obtained mixture is impregnated by separated miscella with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen are performed.
EFFECT: method enables to obtain new flavoured coffee drink according to nonwaste technology.
