SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method involves preparing ingredients, extracting tangerine rind by liquid nitrogen separating corresponding miscella, cutting chicory, drying it in microwave field until residual humidity of about 20% at microwave field power providing heating chicory to a temperature inside the bits of 80-90°C for 1 hour minimum and roasting, cutting brier, apples and pears, drying them in microwave filed until residual humidity of about 20% at microwave filed power providing heating raw materials to a temperature inside the bits of 80-90°C for 1 hour minimum and drying up until residual humidity of about 5% by means of convection. Then barley grain is roasted, chicory, barley grain, brier, apples and pears are mixed in ratio 5:9:2:2:2. Obtained mixture is impregnated by separated miscella performed with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: method enables to produce flavoured coffee drink according to nonwaste technology.
