FIELD: food industry.
SUBSTANCE: invention refers to process of production of coffee substitutes. The procedure consists in preparation of recipe components, in extracting jeera with liquid nitrogen and separation of corresponding miscella, in cutting, drying yacon in SHF field at specified parametres of process and in roasting yacon. Additionally the procedure consists in cutting, drying in SHF field at specified parametres of process and in convective finish drying hips. Also according to the procedure grain of barley, acorns, nut kernels, stone kernels and soya beans are roasted. Yacon, hips, grain of barley, acorns, nut kernels, stone kernels and soya beans are mixed. Further produced mixture is soaked with separated miscella at simultaneous pressure rise, upon which pressure is dropped to atmospheric; mixture is simultaneously frozen and cryo-crumbled in medium of precipitated nitrogen.
EFFECT: procedure facilitates production of new aromatised coffee drink out of non-traditional raw material by non-waste technology.
