FIELD: food industry.
SUBSTANCE: invention refers to process of production of canned compotes. The procedure consists in preparing recipe components, in cutting, drying topisolnechnick in SHF field at specified parametres of the process, in roasting and crumbling topisolnechnick, chestnut and soya beans, in roasting grain of barley, in mixing topisolnechnick, grain of barley, chestnut and soya beans at weight ratio 7:7:2:4, in extracting produced mixture with drinking water and at specified parametres of the process, in filtering produced extract, in preparing a syrup on its base, in pre-packing quince and syrup, and in vacuumising and sterilising.
EFFECT: procedure facilitates production of compote with coffee shades of taste and aroma at absence of coffee in recipe, also simplification of process and reduction of contents of overcooked part of fruit in finished product without decreasing shelf life.
