FIELD: food industry.
SUBSTANCE: invention relates to technology of canned compotes manufacturing. Method provides for recipe components preparation, scorzonera cutting, drying in microwave field at preset process parametres, frying and milling, frying and mincing chestnut and soya, frying barley grain mixing of scorzonera, barley grain, chestnut and soya, obtained mixture extraction by drinking water at preset process parametres, obtained extract filtering, preparation of syrup based on it, packing of quince and syrup, sealing and sterilisation.
EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, to simplify the technology and to extend its storage life.
